Why does God refer to the churches instead of all together as His church when talked about in Revelations? And who are these churches? Its kinda rare, but in the bible we usually see just the church, only a couple of times have I seen churches (plural).

Each letter in NT is addressed to churches, not the Church. But references within each letter talk about those in the church who are of the Church and Church beyond just those in the church.

Like the 7th church of Revelation. It is a church but none in it are Church. The 6th are all church and Church. The other 5 are a mix of both.

Church is not a Bible only term. It is a Greek word that also include false religion places of worship.
